1 whole chicken, cooked and boned
1 can cream of chicken soup
1/2 cup tomatoes and chilies
2 TB quick cooking tapioca
6-8 tortillas, broken into pieces (can use corn or flour--I prefer corn)
1 medium onion, chopped
2 cups grated cheddar cheese

Directions:
Directions:
Cut chicken into bit size pieces. Mix well with soup, tomatoes and tapioca. Line bottom of crock pot with tortillas. Add 1/3 cup chicken mixture. Sprinkle with onion and cheese. Repeat layers. Cover and cook on LOW for 6-8 hours. (HIGH: 3 hours)
