6 large yams or sweet potatoes, about 4 lbs.
5 large navel oranges
3/4 c. sugar
1/2 c. butter, softened or melted
1 T. vanilla extract
miniature marshmallows (optional)

Directions:
Directions:
Wash yams and cook until tender in salted boiling water. Drain and let cool slightly. Peel and slice. Cut oranges in half and squeeze, saving the shells. (Easiest using an electric juicer.)
In a large bowl combine yams, sugar, butter and vanilla. Beat until smooth. Add enough of the orange juice to make a light mixture but not runny,
about 1/2 c.
Mound mixture high in reserved orange shells, about 3/4 c. per serving. Swirl tops with a fork. Place in baking pan and bake at 350º
for 30 minutes or until hot. If desired, place miniature marshmallows on top and place under the broiler just until marshmallows are lightly browned.
