10 ounces broccoli
1 cup Brown Chicken Stock or lower salt ckicken broth
4 tablespoons dark soy sauce
1/4 teaspoon crushed red pepper flakes
1-1/2 teaspoons cornstarch
2-3 skinless,boneless chicken breast halves (1pound), trimmed of all surrounding fat and cut into 1-1/2" pieces
1 egg white, lightly beaten with a fork
1-1/2 tablespoons corn or canola oil
1 medium onion (about 5 ounces), peeled and thinly sliced (1-1/4 cups)
1 small piece fresh ginger, peeled and grated (1 tablespoon)
3-4 cloves garlic, peeled, crushed and finely chopped (2 teaspoons)
1-1/2 Teaspoons dark sesame oil

Cut the broccoli florets from the stalks and divide them into smaller pieces. Discard the tough stalk ends, and peel the remainder of the stalk pieces; slice them into long, narrow strips,approximately 4"x1"x1/4".
Mix the stock or broth, soy sauce, pepper flakes and 1/2 teaspoon of the cornstarch together in a bowl. Set aside.
Place the chicken in another bowl and sprinkle it with the remaining 1 teaspoon cornstarch. Add the egg white and toss the chicken pieces to coat them with the mixture.
Heat the corn or canola oil in a large nonstick skillet. When it is hot, add the chicken pieces and cook them over very high heat for 2-1/2 minutes, turning them as they brown. Remove the chicken from the skillet with a slotted spoon and place it on a plate.
Add the onions to the drippings in the skillet and saute' them for about 30 seconds. Add the broccoli pieces, cover the pan and cook for 2 minutes over medium heat, removing the cover and stirring occasionally.
Return the chicken to the skillet and add the ginger and garlic. Stir in the reserved chicken stock mixture and the sesame oil; cook for 30 seconds longer, until the chicken is heated through. Serve immediately.
