6 TB butter
1 large onion, minced
1 cup regular pearl barley
1 cup sliced fresh mushrooms
3 cups chicken bouillon
1/2 tsp. salt
1/2 tsp. pepper
2 cups cooked chicken, cut up
1 cup raw carrots, cut into thin, short sticks

Directions:
Directions:
Melt butter. Add onion, barley and mushrooms. Saute until lightly browned. Pour into 9 x 13 baking dish. Add chicken bouillon, salt, pepper and carrots.

Cover and bake at 350 until barley and carrots are tender and bouillon has been absorbed (45 minutes to an hour).
