1 large cabbage cut into wedges
1 large onion, diced
1 small package of baby carrots
1 beef smoked sausage or polish kielbasa cut into pieces around 3 inches or smaller
1 small can petite diced tomatoes
1 small can of tomato sauce
3 or 4 peeled, quartered potatoes
Salt and pepper

Directions:
Directions:
Put all ingredients into baking roaster lined up with cabbage wedges; add water to tomato juice as needed to cover meat and veggies. Bake at 350 until done.

Personal Notes:
This is called "Boiled Dinner" but I've always found baking better!! Just double the recipe for larger amounts of people!
