Medium or Larger Flour Tortillas
Soft butter or spreadable margarine
Pre-shredded cheddar cheese
Canned Hormel Chili (or cooked ground beef with taco seasoning)
Canned enchilada sauce
Chopped lettuce
Chopped onion
Chopped tomatoes
Salsa
Sour cream

Directions:

Preheat canned Hormel chili (or fry ground beef with taco seasoning, if you prefer). Preheat a flat griddle on low-medium and use a pan cover that fits over the top of the type of tortilla you are using. Spread one side of tortilla with butter or margarine and place the tortilla on the griddle with the buttered side down. Put pile of cheddar cheese on top of tortilla and cover with lid for 2-3 minutes (but watch carefully until cheese is melted). When cheese is melted, take tortilla off griddle to a large plate and have ready the next tortilla to put on the griddle with cheese (remember the pre-shredded cheese!). Add chile (or ground beef mixture, if you choose) to lineal center of tortilla (chili is faster than ground beef!). Fold each side over top and put enchilada sauce over. Add condiments of lettuce, onion, chopped tomatoes. Use salsa over all and top with sour cream to individual taste.
