2 whole wheat tortillas (8 inch).
2 T prepared Pesto.
16-20 slices of pepperoni.
12 thin slices of zucchini.
4 fresh mushrooms, thinly sliced.
2 thin slices red onion, separated in to rings.
2 T each, of chopped green, red, and yellow.
2 thin slices provolone cheese, cut into strips.
1/4 c. shredded part-skim mozzarella cheese.

Preheat oven to 350F. Coat both sides of tortillas with nonstick cooking spray; place on a greased baking sheet, or on stoneware. Spread with pesto; top with remaining ingredients. Bake at 350 for 10 minutes, or until cheese is melted.
