4 Large Sweet Peppers
14 1/2 Ounce Can Diced Tomatoes
1 Large Onion, Chopped
2 Tablespoons Butter or Margarine
2 Cups Cooked Rice
1 Pound Ground Beef
1 Cup Shredded Cheddar Cheese
4 1/2 Ounce Jar Sliced Mushrooms (Optional)

Directions:
Directions:
Cut off tops of peppers and remove seeds and membrane. Drain tomatoes and reserve juice. Saute onion in butter until tender. Cook ground beef until lightly browned; add onion and tomatoes. Add rice to meat and tomatoes. Mix well. Loosely spoon meat and tomato mixture into peppers. Place stuffed peppers in shallow two quart baking dish. Pour reserved tomato juice over all the peppers. Cover and bake at 350 for 45 minutes. Sprinkle with shredded cheese and bake an additional 5 minutes.
