2 C. flour
2 C. sugar
1 t. salt
1 t. soda
1 1/2 t. cinnamon
1/2 C. nuts
1 1/4 C. oil
2 Jr. size jars baby carrots or 2 plastic containers
4 eggs

Frosting:
8 oz. cream cheese
1 T milk
1 t. vanilla
1 # powdered sugar (approximately)

Directions:
Directions:
Mix all ingredients together. Put in jelly roll pan 10x15. Bake 350 for 20-30 minutes.

Frosting: Mix well and frost cool cake.

I don't measure the powdered sugar for the frosting, just add until good consistency to spread and when it tastes good. (sorry!)
