1/2 raisins
2 c flour
1 c sugar
2 t baking soda
2 t cinnamon
1/2 t salt
1/2 almonds
1/2 c coconut
3 eggs
2/3 c oil
2 t vanilla

1 large tart green apple, peeled, cored & grated. Soak raisins in hot water to cover for 30 min. Drain thoroughly. Preheat oven to 350 degrees. Generously grease muffin tin.

Mix flour, sugar soda, cinnamon & salt in bowl. Stir in raisins, carrots apples, almonds & coconut.

Beat eggs with oil & vanilla to blend. Stir in flour mixture until just blended. Divide batter among muffin cups. Bake until golden brown 20-22 min.
Cool 5 min and remove from pan.
