4 1/2 cups water 3 T. SAF yeast 3/4 cup honey 3/4 cup oil 1 1/2 T. salt 12 cups whole wheat flour
Mix water, yeast, honey, oil and eight cups of the flour in a bread mixer for two minutes. Add salt and remaining flour and mix seven more minutes.
Let rise one hour in loaf pans in unheated oven. Turn heat to 325º F and bake for 25 minutes or until done. (Bake for 23 minutes in convection oven.) Bread should be moist and not overcooked. Makes four loaves.
