2 tbsp. Italian dressing
1 lb. Italian or mild sausage
2 cans (14.5 oz. each) chicken broth
1 16oz. pkg frozen stir-fry vegetables (onions and peppers)
1 can (15oz.) cannellini beans, rinsed & drained (or other-navy, northern, etc.)
1 can (14oz.) Italian-style diced tomatoes, undrained
1-11/4c. macaroni, uncooked
1/2 tsp. oregano
salt (or seasoning salt) and pepper to taste
1 c. mozzarella cheese

Heat oil in large saucepan. Add sausage; cook 8 to 10 minutes or until cooked through, stirring occasionally to break sausage into small pieces. Add broth, vegetables, beans, tomatoes, and spices; bring to a boil. Stir in macaroni. Reduce heat to medium; simmer 8 to 10 minutes or until macaroni is tender, stirring occasionally.
Ladle into 8 serving bowls. Top evenly with cheese. Serve with crackers if desired.
