Chicken:
Croutons (Parmesan or Herb & Garlic are good kinds)
1 cup Parmesan cheese, if desired
2 Chicken Breasts, cut in half lengthwise
2-4 tbsp. butter, melted

Noodles:
1/2 to 1 package of favorite type of noodle (Angel Hair, spaghetti, egg noodle, etc.)

Sauce:
2 carrots, finely chopped
1 onion, finely chopped
1 bell pepper, finely chopped
1 clove of garlic, minced
1 tbsp. oil
1 can canned tomatoes, put through blender to your desired consistency
1 tsp. sugar
dash of salt
dash of pepper
Italian seasonings to taste

Crush croutons and add Parmesan cheese, if desired. Dip chicken half in butter and then in breading mixture and place on a cookie sheet. Cook for about 1/2 hour at 350.

Cook the noodles according to package directions.

For the sauce, mix all ingredients together and simmer on medium-low for 1/2 hour.

Drain noodles. Put noodles on the plate, followed by cooked chicken, and then sauce. Sprinkle Parmesan cheese on top. Serve hot.
