1/2 c margarine
1 1/2 c sugar
1 egg
1 tsp vanilla
2 flour
1 c buttermilk
1 tsp baking soda
1 1/2 c rhubarb (about 1/2" square)
Topping:

1/2 c sugar
1 tsp cinnamon
or

Streusel Topping:
mix by hand or fork
1/2 c sugar
1/2 stick of margarine (soft)
3/4 c flour
1 tsp cinnamon
and/or nuts

Directions:
Directions:
Beat margarine and sugar good - egg and vanilla - mix soda into flour - add about 1/3 of flour to 1st mixture then about 1/3 of buttermilk - until all is used. Fold rhubarb in by hand- pour into (1) 9" x 13" or (2) 8" x 8" cake pan. Top with topping evenly all over cake. Bake at 350 about 35min. Test with toothpick - serve with whipped cream warm if desired.
