2 lbs. potatoes (6 medium), unpeeled and uncut
1 small onion (1/4 c.), finely chopped
1/4 c. Italian dressing (see below)
1 tsp. salt
1/8 tsp. pepper
1/2 c. mayonnaise
1 medium stalk celery
2 hard-cooked eggs

Italian Dressing:
1 c. vegetable oil
1/4 c. lemon juice
1/4 c. white vinegar
1 tsp. salt
1 tsp. sugar
1/2 tsp. dry mustard
1/2 tsp. onion salt
1/2 tsp. paprika
1/2 tsp. dried oregano leaves
1/8 tsp. ground thyme leaves
2 cloves garlic, crushed

Heat 1 inch salted water to boiling. Add potatoes. Heat to boiling; reduce heat, cover and cook until tender 30 to 35 minutes. Drain and cool. Pull skins off and cut into cubes, placing in medium sized bowl. To mix italian dressing, mix all ingredients in shaker and refrigerate for 2 hours. Shake before using. Stir in onion, italian dressing, salt and pepper. Cover and refrigerate 2 hours. Just before serving toss with mayonnaise. Stir
in celery and eggs.
