1 large can green chilies {whole}
1 medium onion, chopped
1 c. raw rice
2 cans beef consommé soup
1 medium pkg. Monterey Jack cheese

Directions:
Directions:
Wash seeds out of the chilies; handle carefully. Stuff with pieces of Monterey Jack cheese {slice like French Fries}. Place in baking dish or 9 x 12-inch pan; set aside.

In a large skillet fry onions in some oil until golden brown; add raw rice. Add 2 cans beef soup and cook until rice is tender, 10-15 minutes. Pour over green chilies and bake 45 minutes to 1 hour in 300º to 350º oven. Cover with aluminum foil. If it seems a little dry after 30 minutes, add some water.

You could spice this recipe up by adding some Pepper Jack cheese in place of the Monterey Jack. You could also add some fajita meat to make it more of a main course.
