Base
250g packet of Arnotts Nice biscuits (or other plain sweet biscuit)
120g melted butter

Filling
120g cream cheese softened
1 can of sweet condensed milk
1/2 cup lemon juice

Directions:
Directions:
Use a food processor/blender to finely crush biscuits. Combine biscuits with butter. Firmly press mixture into a 23cm diameter, 3cm deep flan pan or pie plate.Place base in fridge to chill while making filling.

Beat cream cheese with electric mixer until completely smooth and creamy. While still mixing gradually drizzle in condensed milk. Add lemon juice and beat until combined. The mixture should thicken when the lemon juice is beaten in.

Spread filling over base. Place cheesecake in an air tight container and place in fridge until cheesecake has set.
