1 1/2 pounds new potatoes
1 cup sauce vinaigrette (see separate directions)
8 oz green beans
1 head loose-leaf lettuce, separated, washed, and dried
4 tomatoes quartered
7 1/2 oz can of tuna, drained
3 hard boiled eggs, shelled and quartered
8 anchovy fillets, drained and chopped

This main course originated in Nice, France.

Boil the unpeeled potatoes, taking care not to overcook. Drain, cut in half and dress with a little vinaigrette while still warm. Top and tail the beans and simmer in saucepan in a little boiling water until just tender; drain and dress while still warm. Line a salad bowl with the lettuce leaves and arrange the salad ingredients attractively, ending with anchovy fillets scattered over the top. Pour over remaining vinaigrette dressing.
