"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Stuffed Green Peppers, by Norma Jean, is from Family Favorites ,

families or individuals create heirloom cookbook treasures.
6 large green bell peppers 1 lb of ground round 1 lb of Bob Evans sausage 1 small chopped fine onion 1/2 cup of uncooked rice salt and pepper to taste
Rinse your peppers and cut the top off of each one. Clean the seeds out of the peppers and set aside. In a large bowl, mix your raw meat and ingredients together. Fill each pepper with your mixture and place peppers in a roaster pan or large baking dish with sides. Pour 1 jar of canned tomatoes or 1 large can of tomatoes over your stuffed peppers and you can place the tops of your peppers back on the whole pepper if you wish. Cover the baking dish or roaster pan and bake for 60-90 minutes on 350 º.
