1 1/4 lb ground beef
1 tsp salt
1 tsp black pepper
1 jar (26 oz) pasta sauce with mushrooms, divided
1 can (14.5 oz) diced tomatoes
2 cups ricotta cheese
2 large eggs, beaten
1/2 package (9 oz) no-boil lasagna noodles
1 cup shredded mozzarella cheese

Directions:
Directions:
Place the beef in a large skillet; cook over medium-high heat until brown and crumbly, about 5 minutes. Drain off any excess fat. Season with salt and pepper. Add half the pasta sauce to the skillet; mix well. Pour the tomatoes evenly on top of the beef mixture.
Combine ricotta and eggs in a small bowl. Spread evenly over the tomatoes in the skillet.
Top the mixture in the skillet with a layer of noodles. Repeat layering with the remaining sauce and noodles.
Bring the mixture to a boil, then reduce heat to medium-low. Cover and cook until noodles are tender, about 12 min. Sprinkle the mozzarella. Cover and cook for 2 min longer. Remove the skillet from heat and let stand, cover, for 5 min before serving.

Any type of sauce can be used, our favorite is six cheese. This, of course, is excellent served with garlic bread and red wine!
