2 cups sugar
2 sticks butter
4 eggs, separated
1 bar (1/4 lb.) chocolate or 1/2 cup Hershey's cocoa
1/2 cup boiling water
1 cup buttermilk
1 tsp. baking soda
2 1/2 cups flour
1 tsp. vanilla
3/4 tsp. salt
Icing:
2 cups sugar
2 cups evaporated milk
2 sticks butter
6 beaten egg yolks
2 cups flake coconut
2 cups chopped pecans
2 tsp. vanilla

Directions:
Directions:
Cream sugar and butter, add egg yolks, one at a time, add chocolate. Melt in hot water. Add flour and buttermilk in which soda is dissolved. Add vanilla and salt. Fold in stiffly beaten egg whites. Pour in 3 well-greased 9-inch cake pans. Bake 30 minutes at 350
For icing:
Mix all ingredients together and cook slowly until thick, then add pecans and vanilla. Spread on layers and top.

This is a recipe that my Mother, Mary Nell (Sirmon) Despain, made every Christmas. It was given to her by Louise Greene years ago, I would guess 60 plus, and I have the original recipe she gave to her. I make this each year--I can't let the tradition die.
