Ingredients:  
1/2 lb. bow tie pasta (or penne pasta)
6 oz. sundried tomatoes (1/2 cup chopped)
1/2 lb. spinach lightly shredded (or small baby spinach not shredded)
1/3 c. toasted (or not) pine nuts
1 tbsp. chopped fresh oregano (dried works OK too)

DRESSING

3 tbsp. olive oil (plus I add a little more from the tomatoes)
2-3 tbsp. Red Wine Vinegar
3 tbsp. fresh basil (cut-up)
1 tsp. red pepper flakes
1-2 clove crushed garlic
salt & pepper to taste

Directions:

Boil pasta, rinse in cold water, chill.
Add to the rest of the ingredients, toss with salad dressing.
