4 - 6 oz. pieces salmon fillet
Kosher salt & pepper
1 seedless cucumber, sliced into thin half-moons
1 jalapeņo, seeded & sliced
2 tbsp. fresh lemon juice
1 tbsp. extra-virgin olive oil
1 cedar grilling plank, soaked in water for at least 1 hr.

Heat grill to medium. Season the salmon with 1/2 tsp. salt & 1/4 tsp. pepper; arrange on the plank.
Place the plank on the grill & cook, covered, until the salmon is opaque & flakes easily, 12 to 15 mins.
In a bowl, combine the cucumber, jalapeņo, lemon juice, oil, & 1/2 tsp. salt. Serve with the salmon.

Can also use a whole salmon that is no larger than the cedar plank. Cook for about 20 mins. or until salmon is opaque. Sliced lemons can also be put on top of salmon before cooking.
