12 Eggs
1 Pound Sausage, Cooked
1/2 Cup Chopped Red Pepper
3 Cups Monterey Jack Cheese
1 Cup Shredded Mozzarella Cheese
2 Cups Small Curd Cottage Cheese
1/4 Cup Flour
1 Stick Melted Butter or Margarine
1 Teaspoon Baking Powder

Directions:

Beat eggs. Add sausage, red pepper and cheeses. Combine flour and baking powder. Stir into egg/cheese mixture. Pour into two nine inch pie plates. Bake 35 minutes at 350.

If you like to have things handy in the freezer mix all the ingredients EXCEPT the eggs & freeze. When ready to bake just thaw and add the eggs. I usually split the recipe so I have one on hand. Also this recipe reheats really well!
