4 Granny Smith apples, julienned
12 oz Manchego cheese, julienned
1/2 cup extra virgin olive oil
2 Tbsp minced garlic
2 Tbsp minced shallots
1 Tbsp sherry vinegar
salt and pepper to taste

Directions:
Directions:
Combine apples and cheese in a bowl. In a large skillet over medium heat, cook garlic in 1 Tbsp olive oil. Put in blender with remaining olive oil and the rest of the ingredients. Toss dressing with apples and cheese.

Manchego cheese is a yummy white Spanish cheese--so good and really the best cheese for this salad, but I have sometimes found it difficult to get a hold of. However, you can usually special-order any kind of cheese at the deli in your local grocery store, at no extra charge.

This is a fabulous, fabulous salad--I really can't say enough good things about it! It is light and delicious, easy to make...just so good. Perfect for a nice summer's day picnic, or as a side dish at a party/bridal or baby shower/any other event or get-together, or just a great addition to any family meal!
