4-6 boneless skinless chicken breasts
1/2 c butter
2 Tbsp flour
1 pt sour cream
1 tsp salt
1/2 tsp pepper
1 green pepper, chopped
6 green onions and tops, chopped
1/4 lb (sliced) mushrooms, optional
paprika, optional
parsley, optional

Directions:
Directions:
Brown chicken in butter in a large skillet. Place chicken pieces in large casserole dish in one layer, close together. Make a flour paste in the remaining butter in the pan, stirring until brown. Remove from heat and cool. Add sour cream, gradually. Add remaining ingredients and spread the mixture over the chicken pieces. Sprinkle with paprika and/or chopped parsley if desired. Bake at 325 for roughly 1 hr or until chicken is cooked through.

Nathan and I eat a LOT of chicken, so I am always trying to find new, yummy chicken recipes. This is a definite favorite, although it's maybe not the healthiest dish in the world. But it has great flavor and is just so moist because of the sour cream. Sometimes I'll use plain yogurt instead, to cut back on fat. Also very good, but sour cream is a little better!
