6 lbs chicken, cut up in pieces
6 Tbsp oil (canola or peanut work well)
1 1/2 c flour
1 1/2 tsp salt
1 tsp ground black pepper

Directions:
Directions:
At home: In gallon size zip top bag, combine flour and seasonings.

In camp: Start the coals at least 1 hour before ready to start cooking.

Shake the chicken pieces, one at a time, in the zip top bag with the flour. Make sure each piece is well coated with flour.

Preheat Dutch oven. When it is hot, add oil and allow it to heat about 2-3 minutes.

Add the chicken pieces to the oven, do not cover. Allow chicken to fry for about 10 minutes, then turn and fry for another 10 minutes. Add additional oil if needed.

Baste top of chicken with a small amount of the oil used for frying.

Put lid on oven and add coals on top. Bake the chicken for another 20 minutes. Remove the lid carefully and turn chicken. Recover and allow chicken to bake another 20 minutes or until tender and cooked through.

Total cooking time of about 60 minutes.
