Four boneless, skinless chicken breasts
Juice of one lemon
1/4 to 1/2 tsp. of cayenne pepper
1/3 c. of mayonnaise (Hellmann’s on the east coast, or Best elsewhere)
1/4 c. of grated Parmesan or Romano cheese
McCormick's Grill Mates Montreal Chicken Seasoning
Fresh chopped herbs such as parsley, rosemary or basil (Optional)
Salt and pepper to taste

Start grill, preheat one side on high and the other to medium.
Shake Montreal Chicken Seasoning to cover both sides of chicken breasts.
Cover and let stand for 1/2 hour.
In the meantime combine mayonnaise, lemon juice, salt and cayenne pepper in large measuring cup.
Coat both sides of chicken with mixture and fresh herbs. Let stand for a few minutes.
Place chicken on hot side of grill and sear both sides at 2-3 minutes each side. Move to medium side of grill , close cover and continue cooking for 15-18 minutes turning when needed.
Remove chicken from grill and sprinkle the chicken with grated Parmesan or Romano cheese. Serve whole or sliced.
