6 c fresh or frozen peach slices
1 1/2 c light brown sugar, packed
1 1/4 c all-purpose flour
1 Tbsp lemon juice (fresh lemon juice is best, but bottled works too)
3/4 c rolled oatmeal
1 tsp ground cinnamon
1 stick butter, cold, cut into small pieces
vanilla ice cream, optional
freshly whipped cream, optional

Directions:
Directions:
Preheat oven to 350.
Butter a 9x9 glass baking pan. Set aside.
In a large bowl, toss peaches with 1/2 c brown sugar, 1/4 c flour, and lemon juice. Arrange in prepared baking dish.
Combine 1 c flour, 3/4 c brown sugar, oatmeal and cinnamon in the bowl of a food processor and pulse until blended.
With the food processor running, add cold butter, two or three pieces at a time. Pulse until butter is incorporated and the mixture looks like coarse meal.
Spread topping ingredients evenly over peaches and bake at 350 for 30-40 min or until peaches are bubbling through and the topping is starting to brown. Remove from oven and cool for 15 min before serving.
Serve with whipped cream or vanilla ice cream.
Refrigerate leftovers.

You can change things up by adding blackberries, raspberries, or cherries, or by substituting apple slices for the peaches to make Apple Crisp.

Nathan and I like it best with really good quality vanilla ice cream--SO YUMMY.
