1 3/4 c sugar
1 Tbsp cinnamon
2 1/2 c all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt
1 stick unsalted butter, softened
1/2 c shortening
2 eggs

Directions:
Directions:
Adjust an oven rack to the middle of the oven and preheat oven to 375.

Combine 1/4 c sugar and the cinnamon in small bowl and set aside.

Whisk flour, cream of tartar, baking soda and salt together in large bowl.

Beat butter, shortening and remaining sugar (1 1/2 c) together in a mixer until light and fluffy, 3 to 6 min. Beat in the eggs, one at a time, until incorporated. Reduce mixer speed to low and add flour mixture until combined.

Roll 2 Tbsp of dough at a time to form a ball. Roll balls in cinnamon-sugar mixture to coat.

Bake 10-12 min, rotating baking sheet halfway through cooking time.

I actually only cook these cookies for about 8 minutes, but we prefer them nice and gooey, so depending on your preference, you might want to check them earlier than 10-12 min..

These cookies freeze really well, so I'll usually double the batch to have extras. If you want to set some aside for a rainy day, just pop some of the dough balls into a Ziploc bag and lay flat in the freezer so the balls are not touching. (Roll them in cinnamon-sugar mixture before freezing.)
