2 c flour
1/2 tsp salt
1/2 tsp baking powder
1/4 c Crisco shortening or softened butter
1/2 c water
1-2 Tbsp olive oil

Directions:
Directions:
Mix all dry ingredients. Add water to ingredients gradually, while kneading (may need to add slightly more than 1/2 c--it's ok for the dough to be a little sticky, since you'll be rolling it in flour later). Work dough until smooth. Form dough into 2-inch balls and let stand for 5 min. Roll out each dough ball with rolling pin to desired round shape (works well to roll them out pretty thinly--they cook best that way and very quickly). Heat olive oil in large skillet or griddle and cook tortillas on each side until slightly (golden) brown.

These are SO much better than store-bought tortillas, and you can do so much with them. Work great for a dinner of quesadillas, or as a base for a taco salad, or any of a million other possibilities!
