6 - 7 (lg.) ripe tomatoes
3 - 4 jalapeņo peppers
1 (lg.) white onion
4 - 5 cloves garlic
1/4 c. cilantro
1 tsp. ground cumin
1 T. salt
1 T. sugar
1/4 tsp. black pepper
3 - 4 dashes ground oregano
1/3 c. distilled vinegar

Ingredients should all be chopped finely, then combined in a large pot. Bring to a boil and simmer 1 hr. Fill jars & seal.

Laura is the daughter of Linda (Finkbeiner) Hicks and the granddaughter of Jeane (Hollenshead) Finkbeiner & the late Charles Finkbeiner. This is the 'general' recipe I use. I make very large batches (12-15 qts. at a time) and add more or less of each ingredient to suit our tastes. I usually add extra cilantro as I think this really 'makes' it. If you like chunky salsa, cut veggies in larger pieces. We prefer a smoother salsa, so I usually put all mine through a food chopper.
