2 cups rice
3 cups tomato juice
2 green peppers, cut into strips
1 medium onion, sliced
salt and pepper to taste
1 chicken, cut up

Directions:
Directions:
Spray 6 quart casserole or roaster with Pam. Put rice in bottom of roaster. Add half of the peppers and onions. Then pour on half of tomato juice, add chicken pieces. Season with salt and pepper. Add rest of peppers, onions and tomato juice. Bake about 1 1/2 hour in 375 degree oven.

This is a recipe Caroline made a lot.
Sometimes when I make it I substitute a pint of salsa for some of the tomato juice to give a little bit of zing.
