4 T. chicken fat, turkey fat or butter
1 cup celery stalks and leaves, chopped
1 cup onions, chopped
1/4 cup green pepper, chopped (this can be omitted) OR if preferred you can add 1/8 cup chopped pimentos AFTER mixture is cooked
4 T. flour
2 1/2 cups chicken stock
2 to 3 cups cooked turkey or chicken
Salt and pepper to taste

Directions:
Heat fat or butter, add celery, onions and green pepper. Cook about 10 minutes over low heat or until soft, but not browned. Add flour and stir until blended; slowly add stock, stir over low heat until thick and smooth. Add chicken or /turkey. Season to taste.
