2 ripe mangos, chopped
1 each red, orange, yellow pepper, roasted, peeled and chopped
1/2 c finely chopped red onion
1/2 c chopped cilantro
3 T lime juice
2 fresh jalapeņos, seeded and diced
1 can chopotle in adobe chile peppers, drained, rinsed and diced
1 1/2 tsp crystallized ginger, finely minced

Directions:
Directions:
Combine all ingredients. Serve with pork tenderloin. If you want it hot, don't rinse the chipotle peppers. You can also add fresh pineapple.
