1 lb Bob Evans sausage (original or sage flavor)
3 cups of shredded potatoes, drained and pressed
1/4 cup of butter, melted
12 ounces of mild cheddar cheese, shredded
1/2 cup of onion, shredded
1 (16 ounce) container small curd cottage cheese
8 eggs

Directions:
Directions:
1) Preheat oven to 375 and lightly grease a 9x13 baking dish. 2) Cook the sausage in a large skillet over medium heat. Drain, crumble, and set aside. 3) In the prepared baking dish, stir together the shredded potatoes and melted butter. Line the bottom of the dish with the mixture. In a bowl, mix the sausage, cheddar cheese, onion, cottage cheese, and eggs. Pour over potato mixture. 4) Bake for 1 hour and serve.
