Salmon fillet, 1 per person, skin on
2-3 tbsp Soy Sauce per salmon
1 medium onion, sliced
1 green pepper, sliced
1 red pepper, sliced
1 c. broccoli florets, chopped
1/2 c. peapods
12" x 12" tin foil sheets, 1 per salmon

Optional items to add to Pouch:
Mushrooms, sliced
Carrots, sliced
Water chestnuts, sliced and drained
Bok Choy

Directions:
Directions:
Preheat oven to 350.
Place tin foil on baking sheet and center a piece of salmon on it, skin down. Top salmon with veggies. Fold edges of foil up, creating a pouch. Pour soy sauce over salmon & veggies. Seal foil pouch tightly around edges. (This airtight chamber will "cook" the salmon).
Bake pouches 30 minutes. Careful when opening as the steam released is hot!

Serve over rice. Add other spices like ginger or sesame seeds. Can also be made with chicken cutlets or breasts.
