2 cans white shoepeg corn, drained
1 can black beans, drained and rinsed
1 bunch of fresh cilantro, chopped
1 small red onion, chopped
1 small jar roasted red peppers, drained and rinsed
1/4 c. lime juice
1/4 c. red whine vinegar
1/2 c. olive oil

Directions:
Directions:
Combine corn, beans, cilantro, onion and peppers in a non-metal bowl. In separate bowl, combine lime juice and vinegar, then drizzle in oil with whisk. Pour dressing over corn mixture and refrigerate.

Let stand outside of fridge 10 minutes before serving. Serve w/ tortilla chips. You can also add chopped avocado.
