6 sweet potatoes
6 T butter
3 slightly beaten eggs
1/2 c brown sugar
1/2 c chopped pecans
1/2 c flaked coconut
1/2 c orange juice
1/2 t salt
1/2 t vanilla
10 orange slices
10 marshmallows

Directions:
Directions:
Mash potatoes, stir in butter, beat in eggs, sugar, pecans, coconut, orange juice, salt & vanilla. Turn into 1 1/2 qt.casserole. Bake uncovered in 350 degree oven for 30 min. Top with orange slices and place a marshallow atop each orange slice. Return to oven until marshmallows are golden brown.(about 10 min. more)
