8 oz pieces of beef tenderloin (1 per person)
Olive Oil
Butter
Fresh Garlic

Directions:
Directions:
Heat enough Olive Oil, Butter & Garlic to sear the tenderloin pieces. When the oil mixture is hot (heat to "high"), add the tenderloin pieces and sear until brown on each side (about 5 minutes per side). Place individual pieces of meat in a baking pan with a roasting rack. Pour drippings over the top and bake at 325 for 30-45 minutes or until cooked to desired temperature (150 for medium rare). You can also wrap the tenderloin pieces in bacon for added flavor prior to searing.

In our family Mom & Dad (and sometimes Kim based on relationship status :) ) normally spend Christmas Eve with me while the Hassman's are with Steve's family. In 2008 I succeeded in making the best Christmas Eve dinner ever! We had beef tenderloin and as a treat some of Cousin Rod's halibut poached with melted butter for a great surf & turf meal!
