1/2 c. orange juice
1/3 c. vegetable oil
1/3 c. apple cider vinegar
1/4 c. sugar
6 c. torn salad greens
1 (11-oz.) can mandarin oranges, drained
1 (sm.) onion, sliced or 4 (sm.) green onions, thinly sliced
4 radishes, thinly sliced, optional
1/3 c. raisins
1/3 c. sunflower seeds
3/4 c. crumbled Feta cheese or Bleu cheese
3/4 c. halved cherry tomatoes
1/2 c. walnuts, chopped

Place the orange juice, oil, vinegar and sugar in a jar and shake vigorously to combine; chill. Combine salad greens, mandarin oranges, onions, dried cranberries, walnuts, sunflower seeds, cheese and tomatoes in a salad bowl; chill for at least 1 hr.

Paula is the wife of James Lancaster, the daughter of Glynn & Johnette (Hollenshead) Oakes & the granddaughter of Virginia (Rogers) Hollenshead & the late John Hollenshead. Everyone raves about this salad and it is so easy. I set everything out in my divided veggie tray and let everyone put together their own salad. You could easily add chicken to this for a heartier meal.
