2 lbs. new potatoes, quartered
1 T. minced garlic
1 tsp. chopped fresh thyme
1 tsp. chopped fresh rosemary
3 T. balsamic vinegar
1/4 tsp. freshly ground pepper
dash of lite salt
nonfat cooking spray

Directions:
Directions:
Heat large cast iron skillet, coated with non-fat cooking spray, over medium-high flame. Add potatoes and seasonings and heat through. Remove skillet from heat, place in oven, uncovered, at 425 for 30 minutes, or until potatoes are tender, stirring occasionally. Add vinegar and toss well. Sprinkle with salt and pepper. Roast, uncovered 6 more minutes. Serve immediately.
