1 pkg. Mexican cornbread mix
1 large egg
1 can Rotel (however hot you like it)
1 can cream style or whole kernal corn, do not drain
1 pkg. shredded cheese (your favorite blend)

Directions:
Directions:
Preheat oven according to directions on cornbread mix package. Mix the cornbread mix according to directions and add remaining ingredients. Pour mixture in to a greased baking dish or iron skillet, your preference as to how thick you want the cornbread. Eat alone or serve with your favorite soups, beans, chili, etc.

Turn this cornbread into a Main Dish by adding your favorite browned and drained ground beef, ground turkey or ground sausage. I hope you enjoy!
