3 large tomatoes 1/3 cup olive oil 1/4 cup red wine vinegar 2 to 3 tablespoons chopped fresh basil 2 tablespoons chopped onion 1 teaspoon salt 1/4 teaspoon pepper 1 clove garlic, crushed
Cut tomatoes into 1/2-inch thick slices; arrange in a thin layer in a large shallow dish. Combine oil and remaining 6 ingredients in a jar; cover tightly, and shake vigorously. Pour mixture over tomato slices. Cover and marinate in refrigerator at least 8 hours before serving.
