Dressing:
1/2 c. sugar
1/3 c. lemon juice
2 t. finely chopped onion
1 t. Dijon mustard
1/2 t. salt
2/3 c. vegetable oil
1 T. poppy seeds

Salad:
1 lg. head romaine lettuce
1 c. shredded Swiss cheese
1 c. cashews, halved
1/2 c. sweetened dried cranberries
1 unpeeled apple, cubed
1 unpeeled pear, cubed

Directions:
Directions:
Dressing: In blender (or with wire whisk) combine sugar, lemon juice, onion, mustard and salt. Cover and process until blended. With machine running, add oil in slow steady stream, processing until thick and smooth. Add poppy seeds, process a few seconds to mix

Salad: In lg. serving bowl, combine all salad ingredients, toss to mix. (You may want to add a small amount of lemon juice to prevent apple and pear from browning). Pour salad dressing over salad immediately prior to serving. Toss to coat.
