12 red peppers 12 green peppers 12 medium-sized onions 3 c. sugar 3 Tbsp. salt 2 c. or more vinegar
Clean peppers and onions and put through a food chopper, then put them into a kettle and cover with boiling water. Let stand for 15 minutes. Strain and add sugar, salt, and vinegar. Bring mixture to a boil and simmer for 35 - 40 minutes. Have sterilized canning jars ready; be sure to cool relish before sealing.
