6 medium potatoes (red works best)
6 T. salad or olive oil
2 T. white wine vinegar
2 green onions and tops thinly sliced
1 tsp. salt
ground pepper
1/2 c. sour cream and 1/2 c. mayonnaise
(about 5 cooked eggs, optional)

Directions:
Directions:
Cook potatoes. Then cool, peel, and cut them. Drizzle with oil and vinegar. Add onions, salt and pepper. Cover and refrigerate 1 hour. Blend in mayo and sour cream. Refrigerate 1 more hour. Garnish with egg and paprika.
