3 T butter or margarine
1 cup sugar
1 egg, beaten
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tsp baking soda
1 cup flour
3 cups apples, peeled and diced
1/4 cup chopped nuts
1 tsp vanilla
whipped topping or ice cream, optional

Directions:
Directions:
Cream butter and sugar; add egg and mix well. Sift cinnamon, nutmeg, salt, baking soda and flour and add to creamed mixture. Stir in apples, nuts and vanilla. Pour into greased 8X8X2 pan. Bake at 350 for 40-45 minutes. Serve hot or cold, with whipped topping or ice cream.
