1 lb. ground beef
1 c. chopped green pepper
1/2 c. chopped onion
1/2 c. uncooked rice
1/2 t. basil

3 1/2 c. canned tomatoes
grated or sliced cheese

Directions:
Directions:
Brown first 5 ingredients in skillet. Then add tomatoes and allow to simmer for 25 minutes, stirring occasionally. Put into a baking dish that has been buttered and top with cheese. Place in a 375 oven until cheese is lightly browned.

This was a favorite recipe of my mother, Suzanne Parrish. We had it often in the winter with bread, butter and jelly.
