4 large white potatoes (peeled, chopped & cooked) 2 large sweet potatoes (peeled, chopped & cooked) 1 tub (8 oz.) chive & onion cream cheese spread, divided 1/2 c. sour cream, divided 1/4 tsp. each: salt and black pepper 1/4 c. shredded Parmesan cheese, divided 1/4 c. shredded cheddar cheese, divided
Heat oven to 375º. Place potatoes in separate bowls. Add 1/2 each of the cream cheese spread and sour cream to each bowl; season with salt and pepper. Mash until creamy. Stir 1/2 of the Parmesan cheese into white potatoes. Stir 1/2 of the cheddar cheese into sweet potatoes. Alternately layer 1/2 each of the white potato and sweet potato mixtures in 2-qt. casserole dish. Repeat layers. Bake 15 min. or until melted.
Cheese and sweet potatoes don't sound like they go together but this dish is scrumptious! Good recipe to multiply for large groups. I cook the sweet potatoes in the microwave, then peel and mash.
